Whole Wheat Blend Banana Nut Bread

What You'll Need
- 1 cup all-purpose flour
- 3/4 cup Aunt Jemima® Whole Wheat Blend Pancake & Waffle Mix
- 1/2 cup walnuts, chopped
- 1-1/4 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 cup granulated sugar
- 1/3 cup vegetable shortening
- 2 eggs, slightly beaten
- 2 Tbsp. 2% milk
- 1 cup ripe bananas, mashed (about 2 medium)
What You'll Do
| 1 | Preheat oven to 350° F. |
| 2 | Spray 8"x 4" loaf pan with nonfat cooking spray. |
| 3 | Combine flour, mix, walnuts, baking powder and baking soda in large bowl. Set aside. |
| 4 | In mixer bowl, combine sugar and shortening on medium speed for 1 minute. Add eggs and milk, mix 1 minute or until smooth. |
| 5 | Add flour mixture and bananas alternately, mix just until dry ingredients are incorporated. |
| 6 | Pour into prepared pan. Bake 50-55 minutes or until toothpick inserted in center comes out clean. |
| 7 | Cool in pan 5 minutes. Remove from pan: cool completely. |
