What You'll Need

  • 1 cup all-purpose flour
  • 3/4 cup Aunt Jemima┬« Whole Wheat Blend Pancake & Waffle Mix
  • 1/2 cup walnuts, chopped
  • 1-1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 cup granulated sugar
  • 1/3 cup vegetable shortening
  • 2 eggs, slightly beaten
  • 2 Tbsp. 2% milk
  • 1 cup ripe bananas, mashed (about 2 medium)

What You'll Do

1 Preheat oven to 350° F.
2 Spray 8"x 4" loaf pan with nonfat cooking spray.
3 Combine flour, mix, walnuts, baking powder and baking soda in large bowl. Set aside.
4 In mixer bowl, combine sugar and shortening on medium speed for 1 minute. Add eggs and milk, mix 1 minute or until smooth.
5 Add flour mixture and bananas alternately, mix just until dry ingredients are incorporated.
6 Pour into prepared pan. Bake 50-55 minutes or until toothpick inserted in center comes out clean.
7 Cool in pan 5 minutes. Remove from pan: cool completely.
